Steamed Cake: Puto Espesyal
Ingredients:
- 1 1/2 cups all purpose flour
- 2 tsps baking powder
- 1/4 tsp salt
- 1/2 cup soften butter
- 3 eggs
- 1 cup evaporated milk or fresh milk
- 1/2 tsp vanilla
- 1 cup sugar
- 1/4 cup grated cheese
- 1/4 tsp nutmeg(optional)
Directions:
- Sift together all the dry ingredients.
- Cream butter until light and fluffy. Add eggs one at a time, beating well as you go on. Pour in milk and vanilla. Mix well.
- Fold the dry ingredients into the egg mixture until evenly blended.
- Fill the puto molds 2/3 of the way up with the batter and top with shredded cheese.
- Steam for 20-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Serve warm with grated coconut or butter.

Cheese Quessadillas
I learned to love Mexican food when I moved to the US. American food is not complete without the Mexican food. They are so easy to make with just few ingredients. I just wonder how is American cuisine without the Mexican food and Italian food around. Honestly most American food are unhealthy and greasy junks like french fries, burgers and the taste is so bland.
Quesadillas is a very simple and easy to make dish that is made of tortillas stuffed with cheese, and grilled. You can serve it with salsa and sour cream or beans.
Salsa is actually just a sauce, made with a mixture of red or green tomatoes, onion, chili and cilantro (coriander) served as a relish or a dip.
I did my own version of Quesadillas and it was okay but instead of grilled, I used the pan to heat the flour tortillas. I used cheddar cheese and mozarella cheese combination.
Ingredients:
- Flour tortillas
- Grated cheese, either mild or sharp cheddar, or any cheese of your choice.
- Sour cream
- Salsa
- Heat pan to medium heat. Take one flour tortilla and place it in the pan. Flip the tortilla over a few times. Air pockets should begin to form within the tortilla.
- When air pockets begin to form, sprinkle a handful of cheese over the tortilla.
- Top with another tortilla.
- Reduce the heat to let the cheese melt and not to burn the tortilla. When the cheese is melted, flip over the other side to heat the other tortilla. Remove from pan and cut into wedges.
- Serve with salsa and sour cream.

Chobani Greek Yogurt
What is Greek yogurt? Is yogurt which has been strained in a cloth or paper to remove the liquid whey, hence it has a thicker consistency than the regular (plain) yogurt. Greek and plain (regular) yogurt are made by fermenting milk with live bacteria cultures. The only difference is that Greek yogurt has a thicker consistency and creamier taste. When it comes to the nutritional values, both are healthy, a good source of calcium and protein, and help aid in digestion therefore they should be included in the diet regularly.

Crispy Hash Browns
Hash brown is a breakfast simply made from pan fried shredded potato. An easy to prepare breakfast without fancy ingredients. My kids loves hash browns from Mc Donald but they also like my own version. I made mine crispy so my youngest named it "crispy potato". Crispy potato has been our household favorite breakfast except for hubby who still insists on Mc Donald Hash Browns. Mother should try this easy to prepare food.

Chocolate Banana Cake
I have some overripe bananas sitting on the counter that is waiting to be bake. My kids are not fond of banana cake so I was thinking of something else that they will gonna like. They love chocolate cakes and brownie, so I checked the internet for a chocolate banana recipe. There are actually a lot of recipe for banana cake but a recipe from joyofbaking was I think the best. She made the recipe super easy to do.
Finally, I made the most delicious banana cake recipe ever. The cake turned out to be moist and perfect for the chocolate frosting. It combines the sweetness and richness of ripe mashed bananas and cocoa powder. Chocolate Banana Cake is easy to make. No need for a mixer, just whisks, and two bowls, one for the dry ingredients and one for the wet ingredients.

Baking Directions:
Ganache is a French term referring to a smooth mixture of chopped chocolate and heavy cream. While it is often poured over a cake or torte for a smooth and shiny glaze, this time it is whipped so it becomes a nice thick and spreadable frosting.
- 2 cups (400 grams) granulated white sugar
- 1 3/4 cups (245 grams) all-purpose flour
- 3/4 cup (75 grams) unsweetened cocoa powder(regular or Dutch-processed)
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup mashed ripe bananas or 2 medium sized bananas
- 1 cup (240 ml) warm water
- 1/2 cup (120 ml) milk
- 1/2 cup (120 ml) corn, sunflower or canola oil
- 1 1/2 teaspoons pure vanilla extract
Chocolate Ganache Frosting:
- 8 ounces (227 grams )semisweet or bittersweet chocolate, cut into small pieces
- 3/4 cup (180 ml) heavy whipping cream
- 1 tablespoon (14 grams) unsalted butter
Baking Directions:
- Preheat oven to 350 degrees F (180 degrees C) and place rack in the center of the oven. Butter, or spray with a non stick vegetable spray, a 9 x 13 inch (23 x 33 cm) pan. Set aside.
- In a large bowl sift together the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In another large bowl, whisk the eggs until until the yolk and white are well combined, add the mashed bananas, water, milk, oil, and vanilla extract. Whisk well.
- Add the wet ingredients to the dry ingredients and stir with spatula until combined. You will notice that the batter is quite thin. Pour the batter into the prepared pan and bake for about 35 to 40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Remove from oven and let cool on a wire rack. When completely cooled, frost with the ganache.

- Place the chopped chocolate in a medium sized stainless steel, or heatproof bowl. Set aside.
- Heat the cream and butter in a medium sized saucepan over medium heat (can also be heated in the microwave). Bring just to a boil.
- Immediately pour the boiling cream over the chocolate and allow to stand for 5 minutes. Stir until smooth.
- When Ganache has completely cooled, beat until soft and fluffy (I use a wire whisk). Then spread the frosting on top of the cake. Can garnish with dried banana chips.
I also tried another version of the recipe with some changes in the ingredients since I don't have all the ingredients available, instead of unsweetened cocoa powder, I used my sons Nestle chocolate milk powder and Betty Crocker butter cream frosting and mixed with chocolate chips. I used the microwave instead of stove top for the frosting and it is a lot more easier.

Scotch Egg
I saw the recipe "Fried Sausage Wrapped Hard Boiled Eggs" in one of the food site. It looks so easy to make and all the ingredients are available in my kitchen including the 6 hard boiled eggs that I cooked day before that was kept in the refrigerator. I always have hard boiled eggs that I eat anytime I want. So right there and then, I prepared all the ingredients. But wait, I ran out of flour, so I used pancake mix instead of all purpose flour and the finish product was great.
I Google the recipe and found out about a handful of site with exactly the same photos and posts, I wonder who is the original poster. What amazed me was that the egg recipe is actually known as a "Scotch Egg", a popular picnic food in the UK. Scotch eggs consist of a hard boiled egg, wrapped in sausage meat, then covered in bread crumbs and either deep fried or baked and can be served warm or cold.
- 6 hard-boiled eggs.
- 500g (1.1 lbs) sausage, I used Jimmy Dean pork sausage.
- 1/4 cup pancake mix or 1/4 cup all purpose flour.
- 2 eggs, beaten
- 3/4 cup panko bread crumbs
- Salt and pepper to taste.
- Cooking oil for deep frying
- Boil eggs, peel and let stay in the refrigerator, chill to firm up.
- Divide sausage into 6 portions and flatten each.
- Roll each egg in pancake mix or AFP.
- Wrap eggs with sausage.
- Beat eggs well, Season with salt and pepper. Don't put too much because the sausage has a salty taste already.
- Dip sausage-wrapped into eggs and roll in panko bread crumbs.
- Heat oil over medium-high heat.
- Cook eggs until golden brown turning once in a while to cook evenly.
- Serve cold or warm with a side salad or a vinegar dip.
Cooking Tips:
- Quail or duck eggs can be used too.
- Rolling the eggs to wet and dry ingredients can become messy,you can solve this problem by using one hand for handling the wet ingredients and one hand for the dry ones.

French Toast
Breakfast is the most important meal of the day but because of limited time in the morning, most just skipped it or settle for just a cup of coffee. Breakfast means "breaking the fast" of the night and the food differ from one country to another. The most common examples of breakfast are coffee, juice, fresh fruit, breakfast cereals, toast with butter and jam, pancakes, bacon, sausages and french toast.
French toast is one of my kids favorite breakfast. It is a dish of bread soaked in eggs then fried. I usually serve it together with bacon, some fresh berries or any fruit available.
Ingredients:
- 5 eggs
- 1 cup milk
- 2 teaspoons cinnamon
- slices of white or french bread
- Butter or margarine
- pancake or maple syrup
- dash of salt
1. Beat eggs, milk, and cinnamon together. Whisk until well blended.
2. Dip each slice of bread one at a time into the egg mixture. Make sure it soaked enough mixture before frying.
3. Melt butter on a pan over medium high heat. Add as many slices of soaked bread onto the skillet. Fry until brown on both sides.
4. Serve with butter and syrup.

Sauteed Shrimp and Garlic Asparagus
Asparagus is a spring vegetable that is so easy to cook, grill, roast, steam or simply sauteed it. Asparagus is one of the best food for diet conscious person because it is fat free, contains No Cholesterol and is low in Sodium. It is a nutrient-dense food which is high in Folic Acid and is a good source of fiber, Potassium, Thiamin and Vitamins A, C and B6.
Ingredients:
2 Tbsp. butter or margarine
1 Tbsp. cooking oil
1 bunch fresh asparagus
2-4 cloves garlic, minced
Shrimp
salt and pepper
Directions:
- Heat oil in the skillet over medium-high heat, add the butter or margarine until melted.
- Saute the minced garlic and asparagus spears. Cover and cook until asparagus is tender for 10 minutes or more, stirring occasionally. Season with salt and pepper.
- Remove the cooked garlic asparagus. Set Aside.
- In the same skillet, add shrimp and cooks. Season with salt and pepper.
- Serve the sauteed Asparagus topped with shrimp.

Safety Tips for Leftover Food
It is sad how many people don't value the money their husband earned by throwing away leftover food easily. Home cooking leftovers are often saved to be eaten later. We may keep it in the refrigerator for a certain period of time or reheat when needed or recycle it for another delicious meal. In dealing with leftover food, a knowledge on proper food safety is important to prevent food poisoning( food borne illness) caused by the bacteria from the improper food handling. Food poisoning causes abdominal pain, diarrhea, nausea and vomiting.
Don't let left over food stay too long outside the fridge. The bacteria starts to grow and the food begins to spoil when food is left out at room temperature for a longer period of time. Once you are done eating, make sure to put it on the fridge and just reheat whenever you need it. All cooked foods should be refrigerated, or frozen within 2 hours after cooking. Safe period starts after the food is cooked. The refrigerator temperature should be at 40°F or below.
Never keep leftovers in the refrigerator for more than 4 days. It is better to put a date before refrigerating them to make sure they don't remain in your refrigerator too long. Bacteria typically don't change the appearance, taste or the smell of food, so you cannot tell whether the food is still safe to eat. If you're in doubt about food's safety, never taste it and it's best to throw it away.
When leftover food is reheated, make sure you heat them completely. Leftover food should be reheated to 165°F throughout, by stirring them while reheating.

Snake Cake- Albino Burmese Python
A photo of Albino Burmese Python captured my attention when I logged in to my yahoo account only to find out that this is not a real one, it is a fake snake made by Francesca Pitcher of North Star Cakes in Kent, U.K..She was prompted to add this tagline: "****I DO NOT SELL SNAKES****. This photo is of a snake CAKE made to look like an Amelanistic Burmese Python for a birthday party."
The cake is made of a layer of sponge cake using a white chocolate fondant with special dye to make the skin and replicate the distinctive markings of the dangerous snake. For three days, Francesca Pitcher spent 12 hours for baking and shaping the cake.

Tips for Safe Grilling
Grilling is one of the chores that my husband loves to do. He do the grilling while I do the marinating. When it is grilling time, he makes sure that the grill is clean by handing it to me for cleaning. Then he starts to light the charcoal, and let it burn until all coals are white on the surface. The charcoal should be ashy enough before before placing the food on the grill.

Easy to Make Creamy Rice Pudding
Ingredients :
- 1 1/2 cups cooked rice
- 2 cups milk
- 1cup heavy cream or milk if you don't have it.
- 1/3 cup white sugar
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
- raisins (optional)
Directions :
- In a saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt.
- Cook over medium heat until thick and creamy. Stir frequently to prevent the rice from sticking to the bottom of the pan.
- Add in the remaining 1 cup heavy cream and beaten egg.
- Cook for 10 minutes more over low fire until thickened, stirring constantly. Be careful not to bring the mixture into a boil. Add the vanilla. Remove from heat.
- Stir in butter and raisins. Top with powdered chocolate or cinnamon
- Serve warm or cold.

Fresh Vegetables from my Garden
I love vegetable gardening these are some of the harvest from my vegetable garden last year. I did not plant any vegetables this year because we are moving to another place, to another State and we don't know the actual date, still waiting till now.
Last year was my first time to have a vegetable garden in one part of my property. I do not have knowledge in gardening so I just planted them the way I like it and ended up wasting some vegetable because of too much supply. I even gave some to friends and relative just not to spoil them.
Next year will be another year for me to plant vegetables. Husband promised to make me vegetable beds so I can do my gardening. Vegetable gardening is relaxing, a good exercise and fun to do. There is something therapeutic about growing plants and each gardening season is unique providing an opportunity to start over and try new vegetables or something new.

Fruit and Vegetable a Day Keeps the Doctor Away
Mother knows best when it comes to kids health. We are very conscious of our families health especially during our pregnancy. As much as possible, fruits and vegetable are included in our daily diet and avoid those fatty and oily foods. Here in the US, fruits and vegetables are available abundantly but too pricey. The only fruit that is always in season and the cheapest is the banana but those produced in the country priced too much compared to the fruits imported from Mexico which is a little bit cheaper.

Sinigang sa Miso
Now that I am craving for another Sinigang sa Miso again, I did it my sinigang way or my mothers style. And the result was satisfying.Sometimes, we really don't need to follow what was written on the ready made ingredients step by step to get the best result.
Sinigang sa Miso
Ingredients and instruction:
1. Clean and sliced medium size Hamour fish. Sprinkle with salt to taste.
2. Heat 3 tbsp cooking oil.
3. Fry fish just enough to seal the taste or half cook only.
4. Set Aside.

Prepare the Soup:
1. Saute 3 cloves of garlic minced, 1 small onion and tomato chopped, 3 sliced ginger (I put this to get rid of the fishy taste).
2. Add 2 cups of water. Let boil.
3. Add the sinigang mix. Adjust the amount according to your taste.
4. Add sliced medium size raddish.Cover and let boil for 2 minutes.
5. Add fish. Cover and let boil for another 5 minutes.
6. Add 3 pieces chili pepper/siling pangsigang. Put some salt and pepper to taste.
7. Add mustasa/mustard leaves .
8. Remove from heat.
9. Serve with rice.

Book Rental with a Cause
Going to college is a dream come true for me. Our family is not that well off but my parents work even harder to help us fulfill our dreams. I chose to enroll in a school miles away from our place to taste a little independence and also to get to know myself better. I realized how hard life must be especially when the expected allowance would not arrive on time and I have to take special exams because I failed to pay the tuition fees on schedule. Those times would make me even determined to continue what I started.
A photo of my college days spent mostly in the library reading books that my family cannot afford to buy. I missed those days though, studying and hanging out with friends inside the study room.

You may have plenty of knives but you also really need the proper knife storage and knife sharpening tools to get the most out of your cutlery. Many people simply buy a basic cutlery or knife set and use it until it breaks but that can be dangerous on several levels. It’s often said that a sharp knife is a safe knife so if you don’t sharpen your knives you risk accidents; knives which are not properly cleaned have the potential to harbor germs and breed bacteria.
Baklava
I accidentally bought Baklava during my husband's eye operation. While he was in the operating room, I decided to stop by the store to get me a brekfast. The grocery store sells pastries and sushi in one area. I grabbed a cup of coffee, sushi and cinnamon roll, pay at the cashier, without looking at the items that I picked up, then head back to the hospitals waiting area for a quick breakfast. I excitedly open the plastic bag but to may dismay, no sushi,and got me a baklava instead, that was very disappointing.
What is Baklava? It doesn't sound familiar to most people but for the food lovers and cook, this sweet is not new anymore. Baklava is a sweet pastry made of layers of phyllo dough, brushed with butter in each layer, filled with chopped nuts and syrup or honey. Because of its sweetness and yumminess ,you can eat only as much in a time.
I never tried making this at home yet, I want to, but I can't find any phyllo dough in the store. Based on the recipe and cooking demonstrations that I have watched many times, this Mediterranean delight is so easy to make. I can't wait to make a homemade Baklava.

Food Corner Wednesday #1
Here is the butter cake with chocolate icing that I made for his 2nd birthday. I can't find any icing decorations in Qatar so I opted for some candles just to make a birthday greeting. It turned out not bad at all. The important thing was, they enjoyed candle blowing and the cake so much.

Leftover Soup
Ingredients:
- left over mashed potato
- left over shrimp
- left over cooked spaghetti noodles
- salt and pepper to taste
- powedered or cubed chicken bouillon
- water or chicken stock
- parsley for garnishing
Directions:
- Boil water or chicken stock. Once boiled, add all the ingredients.
- Stir well. Let boil for another 2 minutes.
- Season with salt, pepper and other seasoning to taste.
- Serve hot
