Pancit Bihon Guisado

Pancit Bihon is a very thin rice noodles common in Asian countries. Pancit Bihon or Pancit Guisado is one of the popular Filipino dish. It goes well with lumpiang shanghai and rice. This dish is always served in any ocassions like Fiesta, birthday parties, or just an ordinary day. The recipe varies around the Philippines. As long as you know the basic sauteing you are good to go. We cook pancit according to our style and taste. Some cooked it with sliced meat, shredded chicken, shrimp and whatever vegetables available or simply vegetarian way. Below is the basic and easy to follow Pancit recipe.


Pancit Bihon Recipe

Ingredients:
  • 8 ounces, 1 pack pancit bihon noodles
  • 1 cup shredded boiled chicken meat and/or shrimps
  • 2 cups chicken broth (Boil chicken in water to make the stock)or 1 chicken bouillon cubes dissolved in 2 cups of water
  • 1 small green cabbage, julienne cut/strips
  • 1-2 carrots, julienne cut/strips
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoon cooking oil
  • 2-3 tablespoons soy sauce
  • 1 tablespoon fish sauce (optional)
  • salt and ground black pepper to taste
Directions:

1. Soak the noodles to water to soften
2. Heat cooking oil. Sauté garlic and onions.
3. Add shredded chicken breast/shrimp. Mix well. Add the chicken broth, soy sauce, fish sauce, pepper. Let boil.
4. Add the noodles and all the vegetables. Do not over cook the vegetables.
5. Add salt and pepper according to your taste.
6. Serve with Calamansi or lemon, to be squeezed into the pancit bihon before eating.

Serves 4-6

Notes:

1. Adjust according to your taste.
2. Add any vegetable of your choice or whatever is available in your place.
3. If you have migraine suffering from vertigo, don't put too much soy sauce or avoid using a lot of chicken bouillon cubes.

  1. Pancit Bihon Guisado is one of the most staple food in our home. We put shredded vegetables as you said as we're more of vegetarians than meat-eaters. When there is meat as "sahog," we put them aside. Haha.

  2. Oooh.. My family loves pancit bihon guisado! Too bad though my sis and I don't really dig bihon noodles ^^ We like the canton one better. Anyway, this is a good versatile dish to please both the vegetarians and the omnivores~

  5. It's a bit tiring cooking pancit bihon... You need to evenly mix the noodles with the rest of ingredients.
