Enchilada is a Mexican cuisine made primarily of a corn tortilla rolled around a filling and covered with a chili pepper sauce. You can fill the Enchiladas with whatever ingredients you like like meat, cheese, vegetables, beans, or even seafood. The corn tortillas must be softened before they are rolled and baked by dipping them in the chili sauce or frying them gently in a little oil.
Enchilada
Ingredients:
- ½ lb lean ground beef
- 1 small chopped onion
- 1 tsp garlic minced
- 2 Tsp. green chilis, chopped
- 1 small can tomato sauce
- ¼ cup sliced black olives
- 2 cups cheddar cheese, shredded
- 1 can mild enchilada sauce
- corn tortillas
- ½ cup sour cream
- shredded lettuce
1. Preheat oven to 350 degrees F.
2. In large pan, saute onion, garlic, beef and chilis. Stir in tomato sauce, olives and one cup cheese.
3. In small pan, warm enchilada sauce with small amount of cooking oil. Dip each tortilla in enchilada sauce to soften.
4. Place spoonful of meat sauce on each tortilla and roll up and place in a greased baking pan, seam side down. Top with remaining cheese and olives (optional).
5. Bake for 20 to 25 minutes.
6. Serve with sour cream on a bed of lettuce.
This recipe is quite easy and simple to do. However with the lack of oven, do you think we can still accomplish this? For some pastries and cakes, we use our slow cooker and microwave oven. :)
