Cucumber is one of the most widely cultivated vegetables in the word. I have a lot of fresh produce cucumber from my garden that my family enjoys eating. Fresh crisp cucumber is a perfect side dish to any meal, an appetizer or as a garnish seared fish. Here is a very simple, healthy and delicious cucumber salsa that your family will love.
Ingredients:
- 5 small cucumbers, peeled, seeded, chopped
- 2 medium tomatoes, seeded, chopped
- 1/2 cup green bell pepper, chopped
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 tablespoons fresh lime juice
- 1 teaspoon fresh parsley, minced
- 1 teaspoons fresh cilantro, minced
- 1/2 teaspoon salt
- 1 jalapeno pepper, seeded, minced (optional)
Directions:
1. Mix all the ingredients in a bowl.
2. Cover and chill before serving
3. Serve with tortilla chips or as a side dish.
The recipe seems so easy to make and I really love cucumber especially the salad ones. :D
