Baked Chicken

Baked or roasted whole chicken is an easy recipe. For many years, my baked chicken always comes out juicy and tasty. Baked chicken can be a substitute for turkey on Thanksgiving.


  • 1 whole chicken
  • 1/4 cup salt
  • 1 tbsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • butter for basting
Baking direction:

1. Clean chicken really good. Pat dry with paper towel.
2. Mix together all the dry ingredients
3. Rub whole chicken and inside the cavity with the dry seasoning. You can stuff the cavity with some onions, lemon grass or tamarind leaves inside the cavity for added flavor.
4. Cover with plastic and keep refrigerated for t least 4 hours
5. Preheat oven at 375 degrees.6.Bake uncover for 1 1/2 to 2 hours or until drumsticks move easily in the sockets and a meat thermometer registers 180°F.
7. Baste with butter and drippings once in a while for a crispy skin.
8. Remove from heat. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
9. Serve with gravy.
