Who does not love sotanghon and who says it is only served on special occasions? Sotanghon is very affordable just like the pancit bihon and canton and can be cook anytime we want and not for special day only.
Sotanghon , also called vermicelli is as popular as pancit noodles in the Philippines. It can be cook like pancit guisado(sauteed noodles) or soup. My mother loves to cook a soup out of it with "kasubha" (Philippines local saffron) for coloring and a lot of ginger and shredded chicken topped with green onions.
One thing that I like in my place is, Walmart sells Asian products including vermicelli. Like in my other recipe, I love trying on different ingredients and spices and try to make it as healthy as possible for my families sake.
Chicken Sotanghon Soup Recipe
Ingredients:
- 200 grams vermicelli noodles
- 4 pcs chicken wings, discard tip and cut into 2 pieces.
- 2 cloves garlic, minced
- 1/2 tsp ginger powder
- 2 tablespoons vegetable oil
- 1 small onion, minced
- 1 carrot, julienne cut
- 1 cup broccoli floret
- 2 tablespoons tiparos sauce
- 1 chicken cube (omit if you used chicken stock)
- 6-8 cups water or chicken stock
- salt and pepper to taste
- green onions for garnishing(optional)
Instructions:
1. Cut the noodles using sharp scissors into 6 inches length, set aside.
2. Heat oil, saute onion, garlic.
3. Add the chicken wings, stir fry, add tiparos salt, salt and pepper to taste, add ginger powder. Stir well.
4. Add chicken stock or water and the chicken buillon, stir, cover and bring to boil.
5. Add the noodles and vegetables. Make sure that the chicken is well cook before adding all the vegetables and the vermicelli noodles. Do not overcook the vegetables.
6. Season with salt and pepper according to your taste.
7. Serve hot. Garnish with green onions.
