Baked Chicken and Gravy

Baked Chicken
Baked Chicken is a delicious meal that all the family members would love to eat. It is easy to do and budget friendly.

Directions:

1. Preheat the oven to 375 degrees F.
2. Clean, pat dry with paper towel and rub whole chicken with salt, pepper, garlic powder. You can put some onions, calamansi cut in halves,  lemon slices, lemon grass or tamarind leaves inside the cavity for added flavor.
3. Place the chicken in the roasting pan, drizzle with melted butter. Pour some water in the bottom of the pan.
4. Bake for 1 to 2 hours depending on the size of the chicken, the usual rule is to bake 20 minutes per pound.
5. Brush with butter once in a while for a crispy skin. Serve with gravy.


Gravy- If you know how to make white sauce then you can easily make your own Chicken gravy  but if not, don't worry about it, even the first timer can do it.

Ingredients:
  • 3 tablespoons drippings from the baked chicken
  • 2 tablespoon flour
  • 1 to 1 1/2 cup chicken broth (depends on the thickness you want for the gravy)
  • 1/2 cup sliced mushroom (optional)
  • salt and pepper to taste
Directions:
  1. Place the dripping in a skillet over a medium heat.
  2. Stir fry the mushrooms. 
  3. Stir in flour until smooth. 
  4. Gradually add the chicken broth. 
  5. Season with salt and pepper while stirring continuously to remove lumps. Cook while stirring until the desired thickened. 
  6. Put into a gravy dish and serve alongside the baked chicken or as a mashed potato topping.

  3. Oh, too bad I am on Chicken ban this week. I ate too much chicken for the last two weeks and now I'm suffering allergies. Toinkz! I might try this some time when my allergy is gone. =)

  15. your gravy looks good! I usually just buy the pre-mixed kind since I don't know how to make it from scratch, so this is really helpful...the bhouse cook will no longer have any excuse not to make this :) thanks!
