Proper Care & Handling of Kitchen Knives


Kitchen cutlery is something you use day in and day out in the preparation and serving of food so it’s important to have the right equipment and treat it with care. You may have plenty of knives but you also really need the proper knife storage and knife sharpening tools to get the most out of your cutlery. Many people simply buy a basic cutlery or knife set and use it until it breaks but that can be dangerous on several levels. It’s often said that a sharp knife is a safe knife so if you don’t sharpen your knives you risk accidents; knives which are not properly cleaned have the potential to harbor germs and breed bacteria.


When investing in any knife it’s important to make sure it fits well in your hand; when you are working with food it can often be wet or greasy so a firm grip is essential. The knife should be designed in such a way that all rivets are flush with the handle, the blade is firmly attached to the handle with no gaps or wiggle room and there are no rough spots or irregularities. Knives should never be placed in the dishwasher even if they are labeled as dishwasher safe; the hot water of the wash cycle and the heat of the dry cycle can compromise the overall integrity of the knife.


Knives should never be stored in a drawer where one knife blade can make contact with another; if you wish to have a cutlery drawer it should either be fitted out to hold knives or you should invest in individual knife protectors. Counter top knife blocks are perhaps the most popular knife storage system as they both protect the blade and keep cutlery handy and easy to reach while preparing food.

  1. Knives should be properly handled as they can be prone to rust also and also be may be lethal if left just lying around elsewhere. Most importantly, keep away from kids are places easily accessible to kids.

  5. I just knew the importance of cutlery drawer. I'm really not a kitchen type of person but napapansin ko din po kasi lately, pakalat-kalat lang mga knives sa kusina namin!

  11. I'll have to keep these in mind, especially with the cleaning of blades (to avoid bacteria build-up) and with the sharpening of knives.. We usually just leave our knives (and all the other kitchen tools) to our household help's use. But it pays to also do these precautions on our own. :)

  12. i agree that knives should fit in our hands. I've used many knives of different sizes and it was hard when you can't hold them properly. It could be more dangerous too.
