Crispy Hash Browns

Hash brown is a breakfast simply made from pan fried shredded potato. An easy to prepare breakfast without fancy ingredients. My kids loves hash browns from Mc Donald but they also like my own version. I made mine crispy so my youngest named it "crispy potato". Crispy potato has been our household favorite breakfast except for hubby who still insists on Mc Donald Hash Browns. Mother should try this easy to prepare food.

Ingredients:
  • 4 large potatoes, preferably Idaho
  • 1 large onion, peeled
  • 1/2 tsp salt or according to your taste
  • 1/4 tsp pepper
  • vegetable oil or bacon fat
  • chopped fried bacon(optional)

Direction:
  1. Scrub, rinse and peel potatoes.
  2. Grate/Shred potatoes and onion on the large whole of a box grater. Squeeze well to remove excess moisture. Add chopped bacon (optional),salt and pepper. Mix well.
  3. Heat pan or cast iron skillet over medium heat.
  4. Heat 2 tbsp oil or bacon fat.
  5. Drop a heaping tbsp of the potato mixture  into the oil, flattening slightly with the back of the spoon or fork
  6. Cook for 5 to 7 minutes until they start to turn golden brown on the surface. Turn and continue cooking. If the potato pancake started burning or smoking, turn down the heat.
  7. Remove and drain on paper towel.
  8. Continue with other pancakes, adding oil per batch.
  9. Serve with fried egg, toasted bread, jelly and bacon.
