Mango Crepe


Mango is a tropical fruit that is available in almost all countries. It is generally sweet when ripe and sour when un ripe. We can eat mango in so many ways, cooked or not. My kids loves mangoes so I always make sure to buy some whenever it is available in the store. Here is one of their favorite recipe to snack on eat for breakfast.


Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 tbsp sugar
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter or vegetable oil.
  • Mango, chopped

Mango Sauce
1 whole mango
1 tbsp corn starch dissolved in 1 cup water
1/4 cup white sugar

Peel, slice and remove seed of the mango. Pour in a blender. Add all the ingredients. Puree. Transfer to a small pan, cook into medium fire until thicken. Remove from fire and set aside


Directions:
  1. Beat egg slightly. 
  2. In a large mixing bowl combine sugar salt and flour.Add milk, water, eggs and melted butter. Whisk until well blended. 
  3. Heat non sticky frying pan. Slightly oil the pan over medium heat. 
  4. Pour batter using 1/4 cup for each crepe. Tilt the pan with a circular motion to coat the surface evenly. 
  5. Cook until the bottom is light brown. Loosen with a spatula, turn and cook the other side. 
  6. Place the crepe on a plate. Add chopped mango and mango sauce. Roll or fold. 
  7. Serve warm with mango sauce and nutella (optional).
