Chicken Adobo

This is my mom's easy to cook chicken adobo recipe. Actually, I just found out about my mom's adobo when my sister came to Qatar to baby sit my youngest son  She cooked it one day and the taste was really good, so I asked her how she did it. And that's it, she said that it is our mom's Adobo recipe.

  • 1 whole chicken- cut into serving piesces
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1 onion chopped
  • minced garlic
  • 1 small tomato chopped
  • 1 tbsp kalamansi juice or lemon
  • salt and pepper to taste

Cooking directions:

  1. Throw all the ingredients in a deep pan. Cover
  2. Let it boil  without stirring to avoid the sour taste of vinegar.
  3. Mix well after few minutes of boiling and cover again. Lower the fire to medium .
  4. Cook according to your preference. You can have  it dry or with a little sauce.
  5. Add salt and pepper according to  your taste.
  6. Serve with rice, hard boil egg and tomato.
