Spring Roll ( Lumpiang Gulay)

Spring roll is one of the appetizer that is so easy to do. You don't have to be a good cook to make it. As long as you know how to saute and fry, you are good to go. Here is my mothers recipe, she always use tokwa/tofu and it really tastes good.

Spring  Roll Ingredients:
  • onion chopped
  • garlic minced
  • carrot, julienne cut
  • green beans, julienne cut
  • sweet potato and/or potato, julienne cut
  • bean sprout
  • salt and pepper to taste
  • tokwa/tofu diced
  • 1 chicken cube
Cooking Directions:
  1. In a hot oil, saute garlic, onion and tofu.
  2. Add all the vegetables, tofu, little water, chicken cube, Stir well.
  3. Season with salt and pepper according to your taste.
  4. Let boil until half cook.
  5. Put in a strainer to drain.

How to wrap:
  1. Prepare the spring roll wrapper.
  2. Put one tablespoon of vegetable mix on the wrapper.
  3. Spread it lengthwise and roll make sure to fold both ends.
  4. Seal by dipping your finger in water and paste it at the end of the wrapper.
  5.  Deep fry until golden brown. Place in  a paper towel to remove excess oil.
  6. Serve with vinegar  or sweet chili sauce.
